I thought I’d break up the usual recipe posts and give you a current life update/travel post! This just seems so much more exciting than a recipe post right now since I’m clearly a little excited about my current location and vacation! Sharing a bit about my first couple of days on the beautiful island of Saint Kitts!
My husband and I have a friend who is going to veterinary school in Saint Kitts. He’s opened up his apartment to family and friends and has said many times before there is a standing offer to have a free place to stay if we ever wanted to visit.
A little back story…I have two younger brothers, and I’ve always wanted a sister. However, I am SO thankful and blessed to now have a sister-in-law (Sarah) that is not only super close to me in age, but like a sister to me. Sadly, she lives several hours away from me in a different state, so we don’t always get the opportunity to see each other very often. We decided to go on a sister vacation together; our husbands both couldn’t get away from work this time to come (but can I just say, we are already planning on coming back again sometime…and bringing them along with us!).
We have only been here on Saint Kitts a day and a half, and we’ve already experienced so much!
We arrived Saturday afternoon, and our friend picked us up from the airport. Our first observation was that not only is the driver’s seat on the right side of the car, they also drive on the opposite side of the road compared to the United States! Let’s just say I’m glad I’m not the one having to drive around the island this trip haha.
We went to a beach just minutes from his apartment the first afternoon. I was amazed at how not busy and not touristy it was. So beautiful and peaceful, and the water was the perfect temperature (amazing to be swimming in almost November!). I didn’t take pictures of our dinner last night, but we ate at an adorable local restaurant right on the beach for dinner. And dessert was homemade chocolate chip cookies with sea salt…divine! Definitely went back for seconds on those.
Then Sunday we went on a catamaran! Highlights included snorkeling and getting to visit Nevis, which is a much smaller island next to Saint Kitts. We ate a delicious lunch on Nevis, and got to explore the beautiful beaches there for a bit. The catamaran also included unlimited free drinks, which was a nice bonus. ??
Since we ate out for lunch today, we ate dinner in. Our friend made the most delicious chili (not exactly a typical warm island weather food, but he said he craves the comfort fall foods from back home) and we threw together a quick salad and apples. Unpictured avocado toast (eating even while on vacation, haha!) and dark chocolate with peanut butter were evening snacks/dessert while sorting through my pictures for this post.
Tomorrow’s plans so far include going to a different beach and reading and relaxing, which sounds perfect to me! Hope you all have a happy Monday ?
