Ingredients and Substitution Ideas
Oats
Instead of using whole oats, I wanted a more traditional chocolate chip cookie dough flavor profile so I decided to grind up the oats into oat flour versus using the whole oats. You can easily make homemade oat flour by grinding oats in a food processor or high-speed blender, or buy store-bought oat flour in the baking aisle at your grocery store! Using oat flour versus whole oats gives these chocolate chip cookie dough bites a smoother cookie dough flavor, taste, and texture!
Cashew butter
I HIGHLY recommend using cashew butter in this recipe for the best cookie-dough taste. Peanut butter would completely change the profile (I’d recommend making these monster cookie energy bites or chocolate chip peanut butter granola bars instead!). Almond butter is another option that works well, although I preferred cashew butter for the cookie dough flavor.
Sweetener
This ingredient is probably the most flexible in this recipe! I initially tested these chocolate chip cookie dough bites using honey like in many of my other cookie dough bites. Honey works great. You can also sub pure maple syrup or agave. I prefer honey or agave for liquid sweeteners for the best cookie dough flavor.
However, after I tested this recipe many times and photographed it, I made this recipe using brown sugar on a whim one evening. And that worked surprisingly well AND possibly even better than using liquid sweetener. The brown sugar provided a more “gritty” texture (for lack of better word haha) than the liquid sweetener!
I honestly had such a difficult time deciding what version (honey versus brown sugar) I liked better, so I decided to just let you know that both options work, and you can decide for yourself which one to use! Or make a ½ batch of each and then you can do a little taste test yourself to see which version you like best. ? If using the brown sugar version, you will need to add about 1-2 tablespoons of water or milk to ensure the ingredients mix and stick together well since you’re not using a liquid sweetener.
Sea salt
Honestly, this may seem like an insignificant ingredient but it’s actually so important it gets an entire section devoted to it. Do NOT omit the salt!! It brings all the flavors together and brings out the sweetness in this cookie dough. The cookie dough is definitely lacking without it!
Butter extract
And now for the secret ingredient! This was a last minute addition (I was initially thinking of adding vanilla extract). But since this no-bake cookie dough uses healthy cashew butter (or almond) instead of butter like traditional chocolate chip cookies, this small amount of butter extract provides so much yummy flavor!!! I highly recommend buying it (just look right next to the vanilla extract in the baking aisle of your grocery store). You can of course substitute vanilla extract instead, but this cookie dough will definitely not taste the same if you omit the butter extract, so be warned! ?
Chocolate chips
Obviously needed for a chocolate chip cookie dough energy bite version! I highly recommend using mini chocolate chips, since you will get more chocolate chips in every bite this way and since we are rolling these into small bites/balls. They will also hold together better using mini chocolate chips!
Serving Suggestions
I loved eating these cookie dough bites crumbled up over homemade vanilla ice cream (link) for a cookie dough ice cream situation! It was SO yummy. They are also delicious on their own with a glass of milk! Store these bites in the fridge to keep fresh for up to two weeks, or in the freezer for up to a couple months.
- 1 cup oat flour
- ½ cup cashew butter
- 3-4 tablespoons honey, agave, or pure maple syrup OR brown sugar.*
- ¼ teaspoon sea salt, to taste
- ½ teaspoon butter extract (or sub vanilla extract, but butter extract really makes this taste like cookie dough!
- ¼ cup mini chocolate chips
- Mix all ingredients in bowl until combined.
- Roll into balls.
- Makes 12-16 small bites, depending on desired size. Store in fridge for up to 2 weeks, or in freezer for several months.
- Delicious crumbled over vanilla ice cream! 🙂
