Vegan Paleo Sugar-free Banana Bread

This banana bread is both vegan (so dairy and egg-free) as well as paleo (which means also grain and gluten-free!). PLUS, it has absolutely NO added sugars! The sweetness comes 100% from the bananas. It may be hard to believe that this banana bread can still taste good, but it is INSANE.

Serves: 7-9 muffins
Ingredients
  • 1 cup mashed banana
  • ¼ cup coconut oil, melted
  • 1 teaspoon vanilla extract
  • 1 flax egg (1 tablespoon ground flax + 2.5 tablespoons water)
  • 1 ½ cups almond flour*
  • ¼ cup ground flaxseed
  • 2 teaspoons cinnamon
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
Instructions
  1. Preheat oven to 350 degrees and spray a mini loaf pan or muffin pan with nonstick spray. Set aside.
  2. In a small bowl, stir together mashed banana, melted coconut oil, vanilla extract, and flax egg.
  3. In medium bowl, stir dry ingredients together. Fold wet ingredients into flour mixture gently until combined.
  4. Scoop batter into prepared pan (I use an ice-cream scoop; so easy!).
  5. Bake at 350 degrees for about 20-25 minutes, mine took 23 minutes. Makes 7 mini loaves, or about 8-9 muffins.
Notes
*Or substitute 1 cup all-purpose or white whole-wheat flour + 2 tablespoons milk in place of the 1.5 cups almond flour
