These pumpkin pie chocolate chip overnights oats are creamy yet thick, with a texture resembling cookie dough (my favorite way to eat oats!). The perfect balance of sweetness and spice from the chocolate chips and pumpkin pie spice, this recipe is perfect for meal prep to have on hand for quick breakfasts during the busy week!

Ingredients
  • 1 cup old-fashioned rolled oats
  • ½ cup pure pumpkin puree (100% pumpkin)
  • 1 cup unsweetened vanilla almond milk, or milk of choice
  • 1 serving (46 grams or about ½ cup) vanilla plant-based protein powder*
  • 1 teaspoon cinnamon
  • 1 teaspoon pumpkin pie spice
  • 2 tablespoons mini chocolate chips
Instructions
  1. Add all ingredients to bowl and stir until combined. Divide into two containers (I love using glass jars, but any container will do!).
  2. Refrigerate for at least an hour or overnight. Will keep well in the fridge for several days.
Notes
*if omitting, I recommend adding 2 tablespoons pure maple syrup to add sweetness
