Serves: 8 large servings
Ingredients
  • 1 lb. pork sausage
  • 1 lb. frozen hash browns
  • 1 large onion, diced
  • 4 cloves garlic, minced
  • 12 eggs
  • ½ cup milk
  • 4 ounces sharp cheddar cheese, grated
  • 1 teaspoon ground mustard
  • Salt and pepper, to taste
Instructions
  1. Preheat oven to 350 degrees F and spray a 9x13 pan with nonstick cooking spray. Set aside.
  2. In a skillet over medium heat, brown sausage, onion, and garlic and cook until sausage is no longer pink. Drain fat.
  3. In a medium bowl, whisk eggs, milk, ground mustard, salt and pepper until combined.
  4. Add frozen hash browns to 9x13 pan (option to cook them in skillet first; I'd recommend doing this if you're planning on baking this right away instead of keeping in fridge overnight).
  5. Then add cooked and crumbled ground sausage on top of hash browns, followed by egg mixture.
  6. Lastly, sprinkle freshly grated cheese over top of casserole.
  7. Bake at 350 degrees for about 30-40 minutes, or until eggs are set and completely cooked through.
  8. Let cool a few minutes before slicing and serving!
  9. Leftovers reheat great for easy breakfasts.
