These fluffy and thick pancakes are filled with melty chocolate chips. They just happen to also be 100% whole grain and filled with much more protein than your average pancake recipe….these chocolate chip pancakes are PANCAKE PERFECTION!

Ingredients
  • 1 cup white whole wheat flour (or all-purpose)
  • 1 ½ teaspoons baking powder
  • ¼ teaspoon salt
  • 2 eggs
  • 1 cup cottage cheese
  • ½ cup milk
  • 1 teaspoon vanilla extract
  • 2 tablespoons honey
  • ⅓ cup mini chocolate chips
Instructions
  1. In a large bowl, mix together dry ingredients: flour, baking powder, and salt.
  2. In a blender or small food processor, blend together the eggs, cottage cheese, milk, vanilla extract, and honey.
  3. Next, add wet ingredients to flour mixture and fold gently until combined. Stir in chocolate chips.
  4. Heat skillet/griddle over low-medium heat on stove.
  5. Finally, measure out ¼ cup batter for pancakes and cook until golden brown on both sides.
  6. Makes about 10 pancakes total.
