These salmon burgers are filled with heart healthy omega-3 fatty acids found in salmon, walnuts, and flax seed! They are going to be a staple recipe rotation for you...easy and delicious! I love prepping these ahead of time on the weekends and then they are ready during the weeknights in a matter of minutes! The burgers just take a few minutes to cook on the stove, and can also be frozen to have on hand for later too!

Ingredients
  • 15 ounces cooked salmon (I use canned), drained and bones/skin removed
  • ½ cup oat flour (ground up oats)
  • 1 tablespoon ground flax
  • ½ cup walnuts, chopped
  • ½ cup onion, diced
  • 1 tablespoon Dijon mustard
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons fresh dill (or 1 tablespoon dried)
  • ¼ cup hummus
  • Salt and pepper, to taste
  • 1 tablespoon oil, for pan-frying burgers
Instructions
  1. In a medium bowl, mix together all ingredients except the tablespoon of oil.
  2. Shape into four large salmon burgers.
  3. At this point, you can cover and refrigerate overnight to have for a quick dinner later in the week, cook immediately, or freeze for later!
  4. If cooking immediately, heat oil in large pan/skillet on stove.
  5. Add salmon burgers and cook on medium heat until golden brown and cooked through; a few minutes on each side. Since the salmon is already cooked, you don't have to worry about eating raw salmon or checking the temperature on these!
  6. Serve on buns with slaw, over a salad, or anyway that sounds good to you!
