Arugula (or salad greens of choice)
Roasted crispy chickpeas (see link above in post for recipe)
Sun-dried tomatoes and tomatoes
Feta cheese
Soft-boiled eggs (see link above in post for recipe)
Balsamic Vinaigrette (see link above in post for recipe)
Instructions
On a plate, layer salad greens, then top with all other ingredients! (I don't measure amounts of ingredients for salads).
If making this for meal prep/lunch the next day, I recommend adding the dressing right before serving.
