Creamy, soft-boiled eggs, chewy sun-dried tomatoes, salty feta cheese, crispy roasted chickpeas, and tangy balsamic vinaigrette dressing combine to form quite possibly the best explosion of textures you have ever tasted on a salad

Ingredients
  • Arugula (or salad greens of choice)
  • Roasted crispy chickpeas (see link above in post for recipe)
  • Sun-dried tomatoes and tomatoes
  • Feta cheese
  • Soft-boiled eggs (see link above in post for recipe)
  • Balsamic Vinaigrette (see link above in post for recipe)
Instructions
  1. On a plate, layer salad greens, then top with all other ingredients! (I don't measure amounts of ingredients for salads).
  2. If making this for meal prep/lunch the next day, I recommend adding the dressing right before serving.
