These pumpkin sloppy joes are a delicious twist on a classic meal that I’m confident you will love. The sauce is made with just three main ingredients (plus a few spices!) and this meal is entirely in one pan which makes clean up a breeze. Ingredients
  • 1-1¼ lb ground turkey or beef
  • 1 medium onion, diced (about 1 cup)
  • 2 cups diced mushrooms, optional
  • 2 cloves garlic, minced
  • 1 tablespoon oil
  • ½ cup pumpkin
  • ½ cup apple butter (could sub pumpkin butter)
  • ½ cup BBQ sauce
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • 1 teaspoon smoked paprika
  • ½ teaspoon chili powder
  • Optional: sliced green onion, for serving
Instructions
  1. In a large skillet, add oil of choice and heat over medium heat.
  2. Add in diced onion, garlic, mushrooms and saute for a few minutes until softened.
  3. Add in ground turkey (or meat) and cook until no longer pink and completely cooked through.
  4. Add in pumpkin, apple butter, BBQ sauce, salt, peppers, smoked paprika, and chili powder and let simmer on low heat a few minutes.
  5. Serve with your favorite buns, over sauteed greens, or even plain!
