Did you know you can make pancakes on a sheet pan?! Say goodbye to standing over the stove flipping pancakes! Call me lazy, but honestly I find making pancakes (especially for a crowd!) SO tedious. I’m happy to say those days are no more!! These sheet pan pancakes can make a HUGE amount (but you can always make a smaller batch too!) and I absolutely love how freezer-friendly these are. I make a batch on Sundays, cut them into squares and freeze in stacks to take out of the freezer whenever a pancake craving strikes.

Ingredients
  • 4 cups pancake mix of choice (I use and recommend Kodiak Cakes!
  • 4 cups milk of choice or water (or amount as per pancake mix instructions)
Instructions
  1. Preheat oven to 350 degrees F. Spray a large baking sheet (12x17) with nonstick spray.
  2. In a bowl, whisk together pancake mix and milk until combined.
  3. Pour pancake batter into baking tray and spread evenly.
  4. Bake at 350 degrees for about 15-20 minutes, or until set and cooked through!
  5. Let cool slightly and cut into squares.
  6. This is very freezer friendly and a great meal-prep option to have on hand for easy week-day breakfasts.
  7. You can also halve this recipe and use 2 cups pancake mix and 2 cups milk and use a smaller baking pan (such as 8x11 baking sheet) or 9x13 pan.
