This southwest quiche is seriously filled with so much delicious flavor! This quiche is perfectly seasoned with a homemade taco seasoning that makes this SO good. In addition to the super simple homemade taco seasoning, this quiche is filled with sautéed peppers and onions, sausage, and cheese!! I can’t wait for you to try this recipe yourself…it requires very little hands-on cooking time, and the best part is it makes 6 servings so it’s perfect for feeding an entire family OR (in our case) to meal-prep on the weekend and then have leftovers during the week!

Ingredients
  • 1 large (or two medium) onions, diced (about 2 cups)
  • 2 cups diced bell peppers (any color, I used a mix of red, yellow, and orange)
  • 1 tablespoon olive oil
  • 6 eggs
  • ½ cup milk
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • ½ teaspoon pepper
  • 8 ounces (1/2 lb) cooked sausage of choice (I used pre-cooked chicken sausage links)
  • 1 cup shredded cheese (I used coby-jack, sharp cheddar is also a great option)
Instructions
  1. Preheat oven to 375 degrees F. Spray a deep-dish pie pan or 9x9 pan with nonstick spray and set aside.
  2. Heat olive oil in a skillet over medium heat and add in bell peppers and onion. Saute until softened. Stir in the seasonings into the cooked veggies.
  3. In a bowl, whisk together the eggs and milk.
  4. Layer sauteed seasoned veggies, cooked sausage, and cheese in pie pan. Pour egg mixture over everything.
  5. Bake at 375 degrees for 35 minutes, then cover with foil and bake another 10-15 minutes or until eggs are set.
