Banana Peanut Butter Oat Muffins

Ingredients
  • 2 cups oats, ground into oat flour
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • ½ teaspoon salt
  • 1 cup mashed bananas (2-3 large)
  • 2 eggs
  • ¼ cup peanut butter
  • ¼ cup pure maple syrup (could likely substitute honey)
  • 1 teaspoon vanilla extract
Instructions
  1. Preheat oven to 350 degrees F.
  2. Add 2 cups oats to blender or food processor. Process until oats become a fine flour-like texture and set aside in medium-size bowl. Add in baking soda, cinnamon, and salt to ground oats.
  3. Add bananas, eggs, peanut butter, maple syrup, and vanilla extract to blender and process until smooth.
  4. Add wet ingredients to dry and stir gently until combined. (Over-mixing can cause dense/tough baked goods).
  5. Pour batter into a 12-count muffin pan (should have enough for 12 muffins).
  6. Bake at 350 degrees for about 18-20 minutes, or until a toothpick comes out clean and tops spring back lightly when touched.
