This apple cinnamon streusel bread is literally one of my new favorite fall recipes. It is SO yummy!!! This apple cinnamon streusel bread is bursting with cinnamon, apple, and streusel flavor…it has the BEST taste and texture.

Ingredients
  • For the bread:
  • 2 cups oat flour OR all-purpose OR white whole wheat flour*
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 tablespoon cinnamon
  • ½ teaspoon nutmeg
  • 1 cup applesauce
  • 2 eggs OR 2 tablespoons ground flax mixed with 5 tablespoons water
  • 2 tablespoons milk of choice
  • ¼ cup pure maple syrup
  • ½ cup almond butter OR butter, melted
  • 1 teaspoon vanilla extract
  • 1 cup finely diced apple
  • Streusel topping:
  • ¼ cup walnuts, chopped
  • ¼ cup oats
  • 2 tablespoons brown sugar
  • ½ teaspoon cinnamon
  • 2 tablespoons butter (or almond butter), softened but not melted for best crumb texture
  • Pinch sea salt
  • For the caramel glaze:
  • 1 tablespoon almond butter
  • 1 tablespoon pure maple syrup
Instructions
  1. Preheat oven to 350 degrees. Spray a loaf pan or 12 muffin tin with nonstick cooking spray and set aside.
  2. In a medium bowl, combine applesauce, flax (or regular) eggs, milk, maple syrup, butter or almond butter, and vanilla extract. Whisk until smooth and combined.
  3. In a smaller bowl, combine oat flour, baking powder, baking soda, cinnamon, and nutmeg and stir until combined.
  4. Add flour mixture to wet ingredients and gently stir until combined. Stir in apples and pour batter into a loaf pan (mine was 9x5).
  5. In a smaller bowl, mix together streusel ingredients until combined, then sprinkle with streusel topping.
  6. Bake at 350 degrees in loaf pan about 45-50 minutes. Can also make 12 muffins, which will take about 18-24 minutes to bake.
  7. For the caramel drizzle: in a small microwave-safe bowl, heat almond butter and pure maple syrup about 15 seconds in microwave, then stir together. Let sit a couple minutes to thicken, and drizzle caramel sauce over the apple bread!
  8. This recipe freezes great too!

*can also likely use an all-purpose 1:1 gluten-free flour
