These Sunbutter chocolate covered raisin granola bars are going to be your new favorite granola bar recipe!! I have been enjoying sunflower seed butter more and more over the past couple years; in fact; I almost always have an open jar in my fridge now along with peanut butter (and many other nut butters…). If you’ve never tried Sunbutter before, it is absolutely worth it to buy for making this recipe (of course, you can always sub peanut butter or another nut butter in it’s place). It is absolutely DELICIOUS and pairs perfectly with the dark chocolate covered raisins (don’t worry, if raisins aren’t your thing I list other ideas in the post. ?).

Ingredients
2 cups oats (I used rolled/old-fashioned whole oats, could likely sub with quick oats)
½ cup roasted and salted sunflower seeds
½ cup dark chocolate covered raisins
¾ cup Sunbutter (can sub any nut butter)
¼ cup honey
1 teaspoon vanilla extract
¼ teaspoon salt
Topping:
1 tablespoon coconut oil, melted
1 tablespoon cocoa or cacao powder
½-1 tablespoons pure maple syrup
Instructions
Mix all ingredients together and press into 8x8 pan.
Combine chocolate topping ingredients and drizzle over bars.
Freeze or refrigerate until firm, then cut into 10 rectangle-shaped granola bars or 9 squares. SO GOOD.
