Bursting with bright, fresh lemon flavor, these oats will are reminiscent of a lemon poppyseed muffin but packed with filling fiber and protein to keep you full all morning long!

Ingredients
½ cup old-fashioned rolled oats
½ scoop (about 20 grams) plant-based vanilla protein powder*
½ tablespoon chia seeds**
2 Tablespoons freshly squeezed lemon juice
Zest of 1 lemon
½ cup vanilla unsweetened almond milk***
Optional: fresh blueberries (or other berries) to top
Instructions
Add all ingredients to container (mason jar, Tupperware, etc.). Stir until combined. Refrigerate overnight.
Enjoy for a delicious, ready-to-go breakfast the next morning!
Notes
*I use Vega or Orgain vanilla protein powder. You could omit the protein powder, but this really adds to the thick texture and sweetness. If you do omit, I recommend adding a sweetener (such as ½-1 tablespoon honey) to taste. You may also want to slightly decrease the milk (try ⅓ cup) to achieve a thick texture.
**The chia seeds help make these thick and have so many health benefits! However, you could try substituting 1 teaspoon poppy seeds instead.
***You can use any milk you prefer.
