Chocolate Peanut Butter Banana Protein Breakfast Cookies

Ingredients
  • 1 cup quick oats
  • 1 scoop (about 40 grams) plant-based chocolate protein powder (I used Vega brand)*
  • 1 tablespoons cocoa powder (I used dark)
  • ¼ teaspoon salt
  • ½ cup peanut butter
  • 2 tablespoons ground flax mixed with 3 tablespoons water
  • ⅓ cup milk
  • 1 large ripe banana, mashed (1/2 cup)
  • 1 teaspoon pure vanilla extract
  • ½ cup peanuts, chopped (I used salted cocktail peanuts)
  • ¼ cup cacao nibs or mini chocolate chips
Instructions
  1. Preheat oven to 350 degrees and line a baking sheet with a silicone baking mat or parchment paper. Set aside.
  2. In large mixing bowl, combine oats, chocolate protein powder, cocoa powder, and salt.
  3. In a separate bowl, stir together wet ingredients (peanut butter, flax mixture, milk, banana, and vanilla extract.
  4. Pour wet ingredients over oat mixture and stir to combine. Fold in chopped peanuts and cacao nibs/chocolate chips.
  5. Bake at 350 degrees for 18-22 minutes (mine took 20 minutes). Makes 10 large cookies.
Notes
*You could likely sub an extra ⅓-1/2 cup quick oats in place of the protein powder if you desire. I haven't personally tried this, but I'm sure it would work if you don't have any protein powder on hand! You may want to add an extra tablespoon of cocoa powder if you do this to ensure the recipe is still chocolatey.
