These chocolate chip zucchini overnight oats have all the classic flavors of zucchini bread, but in oatmeal instead! Not only are you eating heart-healthy oats filled with fiber and whole-grains, but you’re eating an entire serving of vegetables in one serving!

Ingredients
1 cup rolled/old-fashioned oats
1 serving (about 46 grams) plant-based vanilla protein powder*
1 cup finely shredded zucchini**
1 teaspoon cinnamon
½ teaspoon nutmeg
Pinch salt
¾ cup milk of choice***
2 tablespoons mini chocolate chips
Instructions
Mix all ingredients together until combined. Divide between two containers.
Refrigerate overnight (or at least for a couple hours) and enjoy the next day for breakfast!
Makes 2 servings.
Notes
*I use Orgain or Vega brand, which I buy online via Amazon prime. You can substitute 1-2 tablespoons maple syrup (to taste) if not using protein powder and may want to decrease milk to ½-2/3 cup instead. **drained and water squeezed out; from 1 medium zucchini ***I use unsweetened vanilla almond milk
