Fig Salad with Fig Balsamic Dressing

This fall fig salad features fresh greens, creamy cheese, crunchy roasted soybeans, roasted carrots, and homemade fig balsamic dressing! So many different flavors, textures, and taste make this salad the furthest thing from boring.

Ingredients
  • 2-3 cups salad greens of choice
  • 1 ounce cheese of choice (I used Havarti, but feta, goat, or halloumi would all work well)
  • 1 ounce roasted soybeans (or chickpeas, roasted or not)
  • About ½ cup roasted carrots
  • 2-3 sliced fresh figs
  • Homemade fig balsamic dressing, to taste
Instructions
  1. Simply layer all ingredients together in large bowl! If preparing this ahead of time for meal prep, I recommend layering in a mason jar and/or keeping dressing separate until ready to serve. Ingredients listed above are for one salad, but recipe can be easily doubled, tripled, etc.
