I have to admit, I’ve been on a monster cookie theme lately! Just recently I shared these classic monster cookies with you, and now I’m so excited to share my new favorite energy ball recipe with you! I make energy balls ALL the time…and have for many years since I first discovered them in college.
Many energy balls are made with a base of dates and nuts (can I just say dates are amazing in so many recipes!), but these energy balls are made out of a base of oats and nut butter! If you’re looking for other delicious flavors of energy balls made out of an oat/nut butter base, these mocha no-bake cookie energy balls, and these oatmeal raisin cookie dough bites are DEFINITELY worth trying! 😊
Here’s what you’ll need to make these no-bake monster cookie energy bites:
Ingredients:
Oat flour
Oats
Peanut butter
Honey or pure maple syrup
Sea salt
Vanilla
Mini chocolate chips
Mini M&M’s
Ingredients and substitution ideas:
Oat flour
I personally always make homemade oat flour in my Vitamix. Simply grind up dates in a high-speed blender to make your own oat flour! Or, you can easily buy oat flour at the grocery store in the baking aisle. Up to you!
Oats
Either quick or rolled/old fashioned oats will work here! Through recipe testing I discovered the best texture was using a combination of oat flour and oats instead of all of one or the other. They also hold together much better this way!
Peanut butter
I love using natural peanut butter that contains just peanuts and salt, but use whatever peanut butter you like (or really any nut butter if you have a peanut allergy). I have to say, they definitely won’t have the classic monster cookie taste if you don’t use peanut butter though!
Honey or pure maple syrup
I have used both honey and pure maple syrup in recipe testing these delicious monster cookie bites. To be honest, I couldn’t tell a huge difference taste-wise, so use whatever one you have on hand!
Sea salt and vanilla
Important to balance the salty-sweet taste and add delicious cookie flavor!
Chocolate Chips and M&M’s
I personally prefer using both mini chocolate chips and mini M&M’s in these monster cookie energy bites for two reasons. One, more chocolate in every bite! And two, they will hold together better than using full size since these bites are smaller than classic monster cookies that spread out while they bake in the oven. If you only have full-size, you might want to chop them before adding to your energy bites.
- ½ cup oat flour
- ½ cup quick or rolled oats
- ¼ teaspoon sea salt
- ½ cup peanut butter
- 3 tablespoons honey or maple syrup
- 1 teaspoon vanilla extract
- 2 tablespoons mini chocolate chips
- ¼ cup mini m&m’s
- Mix all ingredients in medium bowl until combined. Roll into balls. Makes approximately 16-20 energy bites, depending on desired size.
- Store in refrigerator for up to a couple weeks, or in the freezer for a couple months.
