Peach Pistachio Granola Bars

These peach pistachio granola bars are a texture lover’s dream! Chewy oats and sweet, dried peaches combine with crunchy, salty pistachios to make a delicious flavor combination! Plus, these only use FIVE ingredients and about the same amount of minutes to whip up!

I’m back with another no-bake recipe for you! I seriously can’t believe that it’s already the end of August and back-to-school season has come and gone. Crazy how fast this summer flew by! It seriously feels just the other day it was 4th of July. Of course, I was traveling in Europe for a good part of July, which is probably why this summer feels like a blur to me!

These granola bars take a whopping 10 minutes total (max!) to make. Plus, they are no bake. AND? No food processor required. One bowl. Seriously, could it get any easier?!

These granola bars are perfect to make to pack in your kids’ lunches or for easy snacks after school. I love making a batch on them at the beginning of the week to have on hand for grab-and-go snacks. I will often cut and portion them out ahead of time and wrap in plastic wrap or put into individual containers so they are ready to go! I know it’s so convenient and easy to simply buy granola bars from the grocery store, and while there are some healthy and delicious options out there, these really do not take any effort and they can be a lot less expensive than always buying them!

Ingredients

While this recipe has the potential to be very adaptable, I encouraging you to try the peach/pistachio combination! This recipe idea came about when I discovered I had both a bag of dried peaches and pistachios in my pantry. Sometimes I tend to get a little carried away at the grocery store and then forget I have certain things in my pantry. ? I don’t believe I had ever eaten anything with peaches and pistachios before making these bars, and I have to say it’s a delicious combination! I’ve can easily find dried peaches at any local grocery store either in the dried fruit or fresh produce section.

Substitutions

That being said, by all means feel free to get creative with this recipe and substitute another dried fruit in place of the peaches (raisins, cranberries, blueberries, etc). OH MY GOODNESS. Dried blueberries sound delicious. Just thought of that now. Or maybe use half blueberries and half peaches. YUM.

Same with the pistachios, another chopped nut would work here as well. Just thinking out loud here…maybe chopped almonds to go with the peach/almond butter theme? But that wouldn’t be quite as pretty as the pistachios.

As for the almond butter, I love how it easily binds all of the ingredients together, adds heart-heathy fats AND protein while keeping a mild flavor profile. I think cashew butter would also be delicious here, or Sunbutter (sunflower seed butter) or soynut butter if you have allergies to nuts!

Ingredients
  • 2 cups old-fashioned/rolled oats
  • 1 cup diced dried peaches
  • ½ cup pistachios
  • ¾ cup almond butter
  • ¼ cup honey
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt (optional, if almond butter is unsalted)
  • ¼ cup pistachios, chopped (for topping)
Instructions
  1. Mix together all ingredients (except ¼ cup chopped pistachios for topping) in bowl and stir together until combined.
  2. Spray an 8x8 pan with nonstick cooking spray and press granola bar mixture into pan.
  3. Refrigerate until firm and cut into 8 bars.
  4. Enjoy!

      I’m sorry you’re having an issue with that! I just tried, and if I hover slightly above the pictures in the left corner there’s a pin button. I will say it’s slightly off the photo and above it. If all else fails you could always try to get the pin button for your internet browser. Hope that helps!

      Dried apricots (chopped up) would be a GREAT substitution! I actually have some dried apricots on hand now; I may have to try that myself! Plus those are easier to find/more commen than dried peaches. Good idea 🙂
