Another single serving cookie dough recipe is up on the blog today!! This time it is a peanut butter flavor. The combination of peanut flour AND peanut flour makes for an intense, delicious peanut butter flavor! These peanut butter cookie dough bites taste like peanut butter cookie dough and I am HERE FOR IT. ?
These peanut butter cookie dough bites are a delicious sweet snack (in case you can’t tell, I definitely prefer sweet over salty snacks!). Like my other single-serving cookie dough bites, they are delicious on their own, or with vanilla ice cream! Although now that I’m thinking about it…I need to try these chocolate chip peanut butter cookie dough bites over CHOCOLATE ice cream. That sounds delicious ?
Here’s what you need to make these yummy chocolate chip peanut butter cookie dough bites!
Ingredients and Substitution Ideas
Peanut flour
Peanut flour is defatted peanut butter. It’s high in protein and has a flour consistency. Using peanut flour in recipes can result in a strong peanut butter flour. However, peanut flour does NOT have the same consistency or taste of peanut butter if you reconstitute it with water. In this recipe, peanut flour makes the base of this recipe instead of oat flour or coconut flour. Peanut butter is also used, which brings me to the next ingredient!
Peanut butter
Yep, peanut butter and peanut flour are both needed in this recipe! While I typically say feel free to substitute other nut butters, in this recipe I do recommend sticking with peanut butter for peanut butter flavor! Peanut butter is also used as a binder in this cookie dough, and provides delicious taste/texture that peanut flour doesn’t give.
Honey
I really like the combination of peanut butter and honey, so honey is my favorite sweetener in this recipe! However, you can also use pure maple syrup or agave. I’ve used anywhere from 1 teaspoon (not very sweet) to 1 tablespoon honey in this recipe; so use your preference!
Milk
So, here’s the thing. While I’ve made this recipe numerous times, I have to say the amount of milk (if any) you will need may vary based on the consistency of your peanut flour and nut butter. I’d first mix up all of the ingredients except the milk and chocolate chips. If the mixture seems dry, then add milk (Or water, but milk is best flavor) 1 teaspoon at a time until the cookie dough bites together and you can roll it into balls. Any type of milk works here; I typically use almond or oat milk but cows milk works too (just refrigerate the cookie dough bites after making them). I just have learned from experience it’s always easier to add more milk/water, but more difficult to take it away if you add too much!
Vanilla extract
I always buy pure vanilla extract for the best taste! The vanilla extract helps give a cookie dough taste.
Sea salt
Don’t skip this ingredient! A pinch of salt goes a long way here in bringing all the ingredients together.
Chocolate chips
Obviously, a necessary ingredient in CHOCOLATE CHIP cookie dough! I definitely prefer using mini chocolate chips in these cookie dough bites, as they will not only more easily roll into balls but also have a better distribution of chocolate!
- 3 tablespoons peanut flour (24 grams)
- 1-2 tablespoons peanut butter
- 1 teaspoon-1 tablespoon honey
- ½ teaspoon vanilla extract
- 1-3 teaspoons milk or water*
- 1 tablespoon mini chocolate chips
- Sea salt
- Mix all ingredients together in bowl until combined.
- If mixture is too dry, add milk or water 1 teaspoon at a time until a cookie dough texture forms and mixture rolls into balls. If cookie dough is too wet, simply eat by the spoonful or add coconut flour 1 teaspoon at a time until desired texture is reached!
- Enjoy!
