Single Serving Protein Chocolate Chip Cookie Dough Bites

I am so excited to finally be sharing this recipe with you today! These chocolate chip cookie dough bites are the perfect single-serving snack and are SO delicious. These cookie dough bites are made with vanilla protein powder, and since the protein powder is sweet, no additional sugar is needed! (Except for the chocolate chips, that is). I love using  vanilla plant protein powder in these cookie dough bites.

These chocolate chip cookie dough bites come together in a matter of MINUTES, and are ready to eat immediately!! Perfect for a quick snack or even dessert (especially if over vanilla ice cream), but you can also prep these over the weekend to have on hand!

Ingredients and Substitution Ideas

Protein powder

I love using vanilla Orgain plant based protein powder for these cookie dough bites! I have also tested using chocolate protein powder, but I actually prefer the vanilla flavor here. I do recommend using a plant protein powder here. But I have found that plant-based and whey protein have very different consistencies, so different amounts are needed. Another brand of plant-based protein powder I often use and love is Vega sport vanilla protein.

Nut butter

My favorite nut butter is cashew butter! You can use either 1 or 2 tablespoons nut butter here. Obviously, you can use any nut butter here, but I really prefer the neutral, buttery taste of cashew butter here for a traditional cookie dough taste.

Milk

So, here’s the thing. While I’ve made this recipe numerous times, I have to say the amount of milk (if any) you will need may vary based on the consistency of your protein powder and nut butter. I’d first mix up all of the ingredients except the milk and chocolate chips. If the mixture seems dry, then add milk (Or water, but milk for best flavor) 1 teaspoon at a time until the cookie dough bites together and you can roll it into balls. Any type of milk works here; I typically use almond or oat milk but cows milk works too (just refrigerate the cookie dough bites after making them). I just have learned from experience it’s always easier to add more milk/water, but more difficult to take it away if you add too much!

Vanilla extract

I always buy pure vanilla extract for the best taste! The vanilla extract helps give a cookie dough taste. Although, as evidenced by these chocolate chip cookie dough bites, I also love using a tiny bit of butter extract in chocolate chip cookie dough bites!

Sea salt

Don’t skip this ingredient! A pinch of salt goes a long way here in bringing all the ingredients together.

Chocolate chips

Obviously, a necessary ingredient in CHOCOLATE CHIP cookie dough! I definitely prefer using mini chocolate chips in these cookie dough bites, as they will not only more easily roll into balls but also have a better distribution of chocolate!

Don’t forget to check out this oat flour version of single serving cookie dough balls, as well as this peanut flour version, and the coconut flour single serving version too! And if you want a larger batch, I highly recommend this delicious version!

Ingredients
  • 40 grams/about 1 serving plant based vanilla protein powder
  • 1-2 tablespoons nut butter
  • ½ teaspoon vanilla extract
  • 1-2 tablespoons milk*
  • 1 tablespoon mini chocolate chips
  • Sea salt
Instructions
  1. In a medium bowl, mix together all ingredients until combined. Add nut butter last, adding 1 teaspoon at a time until combined and dough sticks together.
  2. Roll into balls.
  3. Refrigerate if not eating right away.

*start with smaller amount, and add more if needed
