Only THREE ingredients and about 5 minutes of hands-on prep time and you will be rewarding with this refreshing summer treat: strawberry peanut butter ice cream! Sweet summer strawberries, creamy frozen bananas, and rich salty peanut butter are transformed into a delicious yet healthy and wholesome ice cream.
Well, we’ve been having quite the moment with summer strawberries lately! What is your favorite summer fruit? It’s so hard to narrow it down, but strawberries will always be up there on the list of my top favorites. So…hopefully you’re not getting tired of all the strawberry recipes around here yet. 🙂
Have you ever tried making banana “nice cream” before? It’s been around for years and is certainly nothing new. Bananas blend into such a creamy texture and provide the perfect base for this fruit-sweetened ice cream. If you’re not a big fan of bananas, no worries. You honestly can’t taste them in this recipe. What you DO taste is strawberry ice cream with a slight peanut butter flavor.
Substitutions
If you have allergies or would rather not have the peanut butter flavor and want to stick to a more traditional flavored strawberry ice cream, I would recommend substituting cashew butter for the peanut butter. While I haven’t tried this yet, I’m sure it would work well as cashew butter has a more mild taste but would still provide a creamy, buttery texture.
Serving Suggestions
Since this recipe doesn’t use an ice-cream maker, it does become pretty hard once frozen. I recommend letting it sit out on the counter for about 15 minutes before trying to scoop it out. If you’re using a microwave-safe glass loaf pan, you could also warm it up in the microwave for a few seconds to speed up this process. What I ended up doing was cutting this into 6-8 servings from the loaf pan (into squares) so it was easier to serve the next time; simple take one serving at a time from the freezer and setting it out on the counter to thaw a bit.
This recipe made for an interesting photo shoot; trying to work as quickly as possible before the ice cream melted everywhere! Let me know if you try this recipe! - 1 lb fresh strawberries, diced
- 2 large frozen bananas
- ½ cup peanut butter
- Blend in blender and freeze in loaf pan overnight. Let sit out 10-15 minutes before serving. Delicious and refreshing for summer!

I saw this recipe and was so excited because David LOVES ice cream and strawberries are one of his favorite fruits. I made the strawberry PB ice cream this morning and surprised David with it after dinner today. It tasted so fresh and delicious.
