Strawberry Vinaigrette Dressing

This homemade strawberry vinaigrette dressing just takes FIVE main ingredients and less than FIVE minutes to make! Making homemade salad dressing is easier, cheaper, tastier, and healthier than buying store-bought!

I thought it was about time that one of my favorite homemade salad dressings got it’s own post! If you’ve been reading for awhile, you may remember this strawberry spinach salad all the way back from last summer! Included in that post is a recipe for homemade strawberry vinaigrette. I recently made that salad dressing again for an upcoming recipe (hint hint!), and thought that it would be nice to have a separate post to reference for this dressing recipe.

Ingredients

A full cup of berries is used in the vinaigrette, and honestly not much oil or vinegar is needed compared to most dressing recipes since the strawberries release so much flavor and juice as they are blended! Let’s take a look at what else you will need to make this recipe.

Strawberry Vinaigrette Dressing

Strawberries.

You will need one cup of fresh strawberries in this recipe! I haven’t tried using frozen strawberries; it may work but I’d let them defrost first.

Olive Oil.

I love using extra virgin olive oil in homemade salad dressings. However, you can easily substitute whatever type of oil you prefer and have on hand!

Red Wine Vinegar.

If you don’t have red wine vinegar, try using white wine! I haven’t tried any other vinegar but these two; you could try apple cider vinegar too!

Fresh Garlic.

I used one clove of garlic, but this is optional. You could also substitute 1/2 teaspoon dried garlic powder in place of the fresh garlic.

Sugar.

Just 1 teaspoon is all you need for the perfect balance of sweet and tartness!

I decided to use red wine vinegar, but white wine vinegar would work well too. The addition of a garlic clove adds a rather unexpected but appreciated depth of flavor.  It just seemed wrong to NOT add garlic to a homemade vinaigrette, and the savory garlic balances out the sweetness of the strawberries. That being said, I’ve made the vinaigrette both with and without the garlic and it’s delicious either way. So you do you.  Also, if you don’t have any fresh cloves of garlic on hand, you could try substituting about ½ teaspoon (or to taste) dried garlic powder.

Strawberry Vinaigrette Dressing

Serves: about ½ cup dressing
Ingredients
  • 1 cup sliced fresh strawberries
  • 2 tablespoons olive oil
  • 2 tablespoons red wine vinegar*
  • 1 teaspoon sugar**
  • 1 clove garlic, minced
  • Salt and pepper, to taste
Instructions
  1. Add all ingredients to a blender (I used my Vitamix). Blend until combined.
  2. Pour strawberry vinaigrette dressing into a container (I like using a glass mason jar) and refrigerate.
  3. Since this dressing doesn't have any stabilizers/preservatives in it, make sure you give it a good shake before using!
  4. Due to the above reason, this strawberry vinaigrette dressing should be used within 3-4 days for best taste and quality.
  5. Enjoy!
