These chocolate peanut butter banana breakfast cookies are fudgy, chocolatey, and bursting with peanut butter flavor! A perfect balance of carbohydrates, fiber, protein, and healthy fats to satisfy your taste buds and your stomach. The texture of these cookies reminds of a brownie. And look at how ridiculously thick they are!
And we are back with another breakfast cookie recipe! While I definitely really enjoyed those cookies, these have my heart. ❤ Because this time we are focusing on chocolate, peanut butter, and banana. Is there a better flavor combination?! And as if this recipe could get any better…chocolate for breakfast. Again. These cookies are 100% appropriate for breakfast. I don’t know about you, but when I start my day with chocolate, it’s bound to be a good day.
Cookies for breakfast?!
I definitely enjoy having something sweet for breakfast. BUT, many common breakfast foods tend to be high in carbohydrates and sugar and lacking in protein and fat. Think cereal, bagels, pancakes, muffins, pastries, etc. These cookies have peanut butter, which adds heart-healthy fats and protein. The addition of chocolate protein powder obviously adds additional protein, as well as chocolate flavor! The oats are filled with fiber, which is also heart-healthy and helps keep you feeling full!
I was honestly pleasantly surprised at how filling these cookies are. But since they have a good ratio of all three macronutrients (carbohydrates, protein, and fat), they have much more staying power than your typical coffee shop muffin or pastry!
This recipe is perfect for meal prep. I love making these at the beginning of the week to have on hand for easy grab-and-go breakfast and snacks throughout the week. They are extremely portable and hold up well for traveling! I kept these in the fridge for optimal freshness. They are delicious cold or warmed up a bit in the microwave. My favorite way to eat these is slightly warmed with a big spoonful of peanut butter on top. TO DIE FOR. Literally tastes and feels like I’m eating dessert for breakfast.
Substitutions
You could likely sub an extra 1/3-1/2 cup quick oats in place of the protein powder if you desire. I haven’t personally tried this, but I’m sure it would work if you don’t have any protein powder on hand! You may want to add an extra tablespoon of cocoa powder if you do this to ensure the recipe is still chocolatey. You may be able to add in 1 egg in replace of the flax egg, but I haven’t tried this yet.
This recipe is delicious with either cacao nibs or mini chocolate chips! (I always prefer mini chocolate chips for more chocolate chips in every bite). The cacao nibs add a nice crunch and variety in texture, whereas the chocolate chips provide little pools of melty chocolate in each bite.
I am so excited about this recipe; I hope you love it as much as I do! And I am SO thankful that as I write this post and edit pictures I have some of these cookies leftover waiting for me in the freezer. They freeze well too! Let me know if you try this recipe!
- 1 cup quick oats
- 1 scoop (about 40 grams) plant-based chocolate protein powder (I used Vega brand)*
- 1 tablespoons cocoa powder (I used dark)
- ¼ teaspoon salt
- ½ cup peanut butter
- 2 tablespoons ground flax mixed with 3 tablespoons water
- ⅓ cup milk
- 1 large ripe banana, mashed (1/2 cup)
- 1 teaspoon pure vanilla extract
- ½ cup peanuts, chopped (I used salted cocktail peanuts)
- ¼ cup cacao nibs or mini chocolate chips
- Preheat oven to 350 degrees and line a baking sheet with a silicone baking mat or parchment paper. Set aside.
- In large mixing bowl, combine oats, chocolate protein powder, cocoa powder, and salt.
- In a separate bowl, stir together wet ingredients (peanut butter, flax mixture, milk, banana, and vanilla extract.
- Pour wet ingredients over oat mixture and stir to combine. Fold in chopped peanuts and cacao nibs/chocolate chips.
- Bake at 350 degrees for 18-22 minutes (mine took 20 minutes). Makes 10 large cookies.

I have always loved the combination of chocolate and peanut butter. I used to love the commercials of the kids running into each other, one child with the Hershey chocolate bar, and the other child with a jar of peanut butter.

Yes, that’s one of my all-time favorite combinations too! In fact, just last night I ate dark chocolate topped with crunchy peanut butter…kind of like a Reese’s but a bit healthier and so delicious!
