You only need 5 ingredients (plus salt) to make these, and the entire recipe is made start to finish in less than 5 minutes. Not to mention, the entire batch is one serving!! Perfect for those cookie dough cravings or when you need something sweet, stat. I mean, personally I’d much rather spend 5 minutes than just eat plain chocolate chips from the bag (but I mean you do you, no judgment here!).
These cookie dough bites make the perfect snack or quick dessert! Not to mention, no need to turn on the oven and they are made with pantry-staple ingredients! These cookie dough bites are similar to these first single-serving chocolate chip cookie dough bites I posted, but instead of using oat flour, they are made with coconut flour. Coconut flour is very absorbent, so much less is needed. Coconut flour will also make these cookie dough bites naturally grain/gluten-free!

Ingredients for Cookie Dough Bites
Coconut flour
As I mentioned, instead of oat flour, these cookie dough bites are made with coconut flour. Coconut flour is packed with tons of fiber! You can buy it in the baking aisle of your grocery store. If you don’t have coconut flour or don’t prefer to buy it, I’d suggest heading to this cookie dough bites recipe that uses oat flour instead! Since coconut flour is very absorbent and not a 1:1 sub for other flours, you only need two tablespoons for this recipe.
Nut butter
For the most traditional cookie dough taste, I highly recommend using cashew butter, with almond butter being a second choice. Peanut butter is also delicious (but will obviously taste like a peanut butter chocolate chip cookie). Sunflower seed butter also has a stronger taste like peanut butter, which I personally love! I have made this recipe many, many times and have used just about every type of nut butter possible! I love switching it up for different flavors.
Agave
While I typically use pure maple syrup and honey most often in recipes, I did like the neutral taste of agave in this recipe! I typically find agave in the baking aisle near the sugar. You can absolutely use either pure maple syrup or honey instead of agave though.
Vanilla extract
I always buy pure vanilla extract for the best taste! The vanilla extract helps give a cookie dough taste. Although, as evidenced by this larger bath of chocolate chip cookie dough bites, I also love using a tiny bit of butter extract in chocolate chip cookie dough bites!
Sea salt
Don’t skip this ingredient! A pinch of salt goes a long way here in bringing all the ingredients together.
Chocolate chips
Obviously, a necessary ingredient in CHOCOLATE CHIP cookie dough! I definitely prefer using mini chocolate chips in these cookie dough bites, as they will not only more easily roll into balls but also have a better distribution of chocolate!
Milk
I found that unlike the oat flour version, usually no milk was needed for these cookie dough bites. That being said, coconut flour is definitely different. If you find that your cookie dough is not sticking together or looks dry, you might need to add a touch of milk or water (I’d start with ½-1 teaspoon!) and slowly add more as needed until a cookie dough texture forms and the dough sticks together enough to roll into balls and is the texture you prefer.
Serving suggestions
I love making these cookie dough bites the night before to have on hand for easy work snacks the next day! They are also delicious crumble over vanilla ice cream for dessert ?

- 2 tablespoons coconut flour (15 grams coconut flour)
- 2 tablespoons cashew butter
- 1 tablespoon agave
- ½ teaspoon vanilla extract
- 1 tablespoon mini chocolate chips
- Sea salt
- Mix all ingredients together in bowl until combined.
- If mixture is too dry, add milk or water 1 teaspoon at a time until a cookie dough texture forms and mixture rolls into balls. If cookie dough is too wet, simply eat by the spoonful or add coconut flour 1 teaspoon at a time until desired texture is reached!
