Fig Balsamic Dressing

Perfectly sweet, tangy, and surprisingly very creamy, this fig balsamic dressing takes FOUR ingredients and just minutes to whip up! Making homemade salad dressings takes just a tiny bit of effort and time, but it’s always so worth it. You can beat the taste of fresh homemade salad dressings!

First of all, I’d like to apologize about the concerning lack of color in this week’s recipes. BUT, some fun recipes are coming that involve a little more color soon 😉 In fact, just like with this recipe, it may be a good idea to prep this dressing this weekend so you are ready for Monday’s recipe (hint hint).

This dressing has a bit of a background story to it. The other weekend I was visiting a friend from college, who has a Trader Joe’s in her city. SO JEALOUS. I’ve been there before, and always walk away wishing there was one closer to where I live! Anyways, my most exciting find and purchase this time had surprisingly nothing to do with dark chocolate or nut butter…but rather fresh figs!!! I have seen/bought dried figs before, and have been dying to try fresh figs for awhile now but have difficulty finding them where I live.

Substitution Ideas

I had SO MUCH FUN testing some new recipes with my fresh figs…this isn’t even my favorite one (but it seriously it my current new favorite salad dressing!). More to come! I haven’t tested this with dried figs, and don’t think it would yield good results since they have such a different texture. The fresh figs add a perfect sweetness and creaminess to this dressing, that I honestly feel like I can’t call it a vinaigrette (such difficulties with naming it!). Anyways, if you can’t find fresh figs near you, you could try substituting another fresh fruit such as strawberries (similar to this dressing, but I’d recommend the ratios below for the ultimate best taste) or even try blueberries.

 

This homemade dressing literally takes just minutes to make in a blender, and is so delicious to meal-prep and have on hand for salads (or try as a dip with veggies!) for the week. Hope you love it!

Serves: about 1 cup
Ingredients
  • 1 cup fresh figs, diced
  • ¼ cup balsamic vinegar
  • ¼ cup olive oil
  • 1-2 cloves garlic, minced
  • Salt and pepper, to taste
Instructions
  1. Simply add all ingredients to a blender, and blend on high until smooth and creamy. Store in refrigerator. Will keep fresh up to a week.

    Hi looks like a fun recipe! Question do you chop the figs as is or need to remove the skin and then chop up.? Haven’t really used this ingredient before thanks
