Happy Monday everyone! Today is the day when I have to come back to reality. The day after getting back from 2.5 weeks of traveling in Europe and the first day I’ve worked in QUITE a while. *Sigh* While it was so nice to not have to cook or meal prep for several weeks, I’m actually ready to get back into the kitchen and finally start recipe testing and meal-prepping again after such a long time away! Speaking of meal prep…this recipe is great to make to have on hand for the week!
Anyone else love making homemade salad dressings?! If you haven’t tried making your own before, let me assure you it is seriously SO easy. This recipe, start to finish, takes literally less than 5 minutes. Not only that, this vinaigrette actually contains VEGETABLES. Don’t run away! It tastes delicious, trust me. ?
I always try to never let any produce go to waste. I have literally had people at the grocery check-out comment before how it’s wonderful that my family/children eat so many fruits and vegetables. And I’m like…well, my husband and I do! The two of us eat as many fruit and veggies as an entire family, apparently. ?
Fresh produce certainly makes up the bulk of our weekly groceries. I LOVE having a garden in the summer to be able to just go outside in our backyard and pick vegetables for that day. However, sometimes with a garden it can be a bit overwhelming when you have a ton of produce to use all at once!
This green onion vinaigrette dressing idea came to me when our neighbor (who has significantly larger garden than we do) gave me TONS of freshly picked green onions from his garden. Green onions were something I didn’t plant in our garden, and he has like three long rows of them. I literally probably had the equivalent of 10 bunches you’d buy in a grocery store. These homegrown green onions were about 3 times the size of regular green onions. The bunches were huge! I was struggling to know what to do with them all. Hence this green onion vinaigrette recipe was born!
Only THREE Ingredients
I don’t know if it can get much simpler than this. Green onions, olive oil, and white wine (or red) vinegar. Salt and pepper hardly count as ingredients, right? That’s seriously all you need to make a super flavorful, versatile, green goddess type salad dressing! I used white wine vinegar, but I’m guessing red wine vinegar would work well too. And then we have olive oil, which is filled with lots of heart-healthy monounsaturated fats!
- 2 cups chopped green onion
- ¼ cup olive oil
- ¼ cup red or white wine vinegar
- ¼ teaspoon salt
- ¼ teaspoon pepper
- 2 tablespoons water, as needed to thin
- Add all ingredients to blender and blend until smooth.
- Makes about 1 cup dressing. Shake if ingredients separate after time in fridge.
- Due to the fresh green onions, this dressing is best used within 2-3 day.
- Delicious on salads, as a dip, on grilled chicken, etc!

My mother learned this recipe while cooking (forced labour) at work camps in WWII Germany. She used to make this for us when we ended up in Canada as ‘Displaced Persons’. I learned to love the vinaigrette on salads, over 65 years ago.
