Honey Cinnamon Peanut Butter (Copy-Cat RX Nut Butter)

As if peanut butter wasn’t amazing enough on it’s own….this honey cinnamon peanut butter will BLOW YOUR MIND. Don’t be surprised if you’re eating this plain. By itself. By the spoonful. Don’t say I didn’t warn you.  ? Seriously, this is the BEST peanut butter I have ever had. Store-bought included. In fact…this recipe was inspired by RX new nut butters…and not to toot my own horn, but I’ve had several people tell me this homemade version is EVEN BETTER than the store-bought. Not only does this taste better…you can make it at home with just a few pantry-staple ingredients for a fraction of the price! ?

Goodness, it’s been way too long since we’ve had a homemade nut butter recipe around here!!  I love making fun homemade nut butters that either aren’t available in stores (like this strawberry PB&J nut butter) or are more expensive to buy in stores.

This recipe actually was a specific request from a blog reader! She had tried the new RX honey cinnamon peanut butter and loved the taste, but not the price (especially in those single-serving packets!). She asked if I had any ideas for a larger batch homemade version. Of course, I was so excited to get in the kitchen and test this out!! Back to this peanut butter recipe. The RX honey cinnamon peanut butter uses just a few simple ingredients: peanuts, dates, honey, cinnamon, coconut oil, and sea salt. Sounds pretty simple to recreate to me!  Let’s talk a little more in depth about the ingredients…

Ingredients and Substitution Ideas

Peanuts.

Clearly needed for a peanut butter recipe 😉 I highly recommend using cocktail peanuts, as these taste much more flavorful to me than other varieties such as dry roasted. You will need two cups of peanuts!

Medjool Dates.

I seriously love how versatile dates are in recipes, especially no-bake recipes. Dates are a great way to sweeten recipes without any added sugar. The dates provide natural sweetness (from fruit!). The RX nut butters (and bars) include dates as well. I’ve mentioned this before in past recipes, but I highly recommend paying a bit more to buy the Medjool dates. These are almost always found in the fresh produce section. Other date varieties, such as Deglet-noor, are found in the dried fruit aisle but these are much smaller, drier, and less sweet than the Medjool dates. If you’re dates are on the dry side (which can happen after opening the package), I’d recommend soaking the dates in hot water for a few minutes before adding to the rest of the ingredients.

Honey.

You will just need 1 tablespoon of honey for this entire recipe! The honey provides additional sweetness and delicious flavor just like the store-bought version. If you remember from WAY back over a year ago, I also posted this honey roasted nut butter using honey roasted nuts. I have to say, while that recipe may be a little easier, this new version is MUCH tastier. Plus you have more control over the ingredients!

Cinnamon.

Adds delicious flavor! You could omit or just use one teaspoon cinnamon if you don’t like cinnamon as much…I personally love it though!

Coconut oil.

When you add the honey and dates to this recipe, it will cause the peanut butter to “seize up” and become very thick. The coconut oil not only adds delicious flavor, but will cause the nut butter to become smooth and creamy. You could likely substitute another oil in place of the coconut oil, but I wanted to keep this recipe as close as possible to the store-bought version!

Sea salt.

I honestly can’t believe how just a little amount of salt can make all the difference in nut butters! I love sweet/salty, but honestly this doesn’t really specifically taste salty. The salt rather just allows the flavors to really come through. Don’t leave it out!

Serves: 1-1.5 cups
Ingredients
  • 2 cups cocktail peanuts
  • 2 Medjool dates
  • 2 teaspoons cinnamon
  • 1 tablespoon honey
  • 3 tablespoons coconut oil
  • ¼ teaspoon sea salt
Instructions
  1. In a high-speed blender (such as a Vitamix) or a food processor blend peanuts until they have broken down and form a paste. You will need to scrape down the sides if using a food processor or use the tamper on a Vitamix.
  2. Then add dates, cinnamon, honey, and salt. The peanut butter mixture will probably "seize up" and become very thick once you add the dates and honey. This is normal.
  3. Last, add coconut oil 1 tablespoon at a time.
  4. Continue to blend until a smooth, creamy peanut butter forms!

    Brittany is one of my best girl friends and brought me some of this in an 8 ounce jar and BY MYSELF it was half way gone within 24 hours. I ate just by itself and literally by the spoonful. SO GOOD!!!
