Bursting with bright, fresh lemon flavor, these overnight oats are reminiscent of a lemon poppyseed muffin but packed with filling fiber and protein to keep you full all morning long!
Overnights oats: have you tried them before? They’ve been around for awhile now, but it wasn’t until a couple years ago that I finally realized how much I liked them! I think I tried them many years ago but wasn’t a big fan as I thought they were too soupy/runny and didn’t care for the texture. However, I found out that I DO in fact love overnight oats…if they are prepared correctly!
Of course there are many ways you could make overnight oats based on your preference. Some recipes call for a 1:2 ratio of oats:milk. However, as I mentioned I found that way too runny and didn’t care for it. I prefer a ratio of 1:1 oats to milk, which comes out to 1/2 cup of oats and milk in this recipe scaled for one serving.
I also learned that adding protein powder and/or chia seeds can really contribute to a thick, creamy texture! Have you tried chia seeds? They are packed with fiber and protein, as well as omega-3 fatty acids, which are important for heart health. Just 1 tablespoon contains 4 grams of fiber!
These couldn’t be easier to make. Just taking 5 minutes to prep the night before, and breakfast is completely ready to go the next morning!
I love adding blueberries to these oats! Lemon and blueberries are such a delicious combination. That being said, you can definitely add any toppings you want! Feel free to add more milk too, depending on your personal preference for texture and consistency.

- Β½ cup old-fashioned rolled oats
- Β½ scoop (about 20 grams) plant-based vanilla protein powder*
- Β½ tablespoon chia seeds**
- 2 Tablespoons freshly squeezed lemon juice
- Zest of 1 lemon
- Β½ cup vanilla unsweetened almond milk***
- Optional: fresh blueberries (or other berries) to top
- Add all ingredients to container (mason jar, Tupperware, etc.). Stir until combined. Refrigerate overnight.
- Enjoy for a delicious, ready-to-go breakfast the next morning!
**The chia seeds help make these thick and have so many health benefits! However, you could try substituting 1 teaspoon poppy seeds instead.
***You can use any milk you prefer.

SO many things! I love adding chocolate protein powder to homemade cold-brew coffee to make a much cheaper, healthier, and delicious homemade iced mocha. Also smoothies/smoothie bowls, granola bars, baked oatmeal, muffins, etc.

Glad you tried that recipe! Hmm that’s a good question…I’ve also used them in granola and granola bars. BUT when they aren’t soaked like they are in overnight oats, they tend to get stuck in your teeth! haha. I’ve also tried chia pudding before (chia seeds, milk, sweetener, flavorings/fruit, etc.), but again don’t always like that texture (I always blend it well until creamy). My other favorite use for chia seeds is coming to the blog next week…so stay tuned! π

My go-to grocery shopping places are Aldi and Kroger. Both of these stores always have chia seeds (look in the baking aisle). However, you can also buy them at Meijer and Walmart! Pretty much anywhere.
As for protein powder, my favorites are Vega sport protein (vanilla for this recipe) or Orgain vanilla, which are both plant based and you can easily order online through Amazon for the best price. However, all of the above grocery stores sell other brands of protein powder.
