Single Serving No-Bake Cookie Dough Balls

What to do when you are craving cookie dough and need it NOW?! Make these single-serving no bake cookie dough balls!! They are made start to finish in less than 5 minutes, and while it makes a generous serving, it’s the perfect amount for one sitting!

These cookie dough bites are completely edible and meant to be eaten as cookie dough. I love prepping these on a Sunday afternoon to have on hand for quick snacks during the week. Although, they also make a great breakfast (I like crumbling these cookie dough bites over vanilla Greek yogurt). And, I’ve been known to crumble them over vanilla ice cream too and eat them for dessert. They are SO yummy and versatile!

Here’s what you need to make this recipe!

Ingredients and Substitutions

Oat flour

I personally never buy oat flour; I always simply make my own in less than a minute in my Vitamix blender. You will need ½ cup of oats (rolled or quick oats both work), and after blending it was about 1/3 heaping cup oat flour. You can also easily buy oat flour in the baking aisle of most grocery stores! The oat flour also gives these cookie dough bites a “no bake cookie” taste. Also, unlike all-purpose flour, there is no need to heat-treat oat flour so it’s perfectly safe to eat raw!

Nut Butter

I actually used sunflower seed butter in these pictures. However, I have made this recipe many, many times and have used just about every type of nut butter possible! I love switching it up for different flavors. For the most traditional cookie dough taste, I highly recommend using cashew butter, with almond butter being a second choice. However, peanut butter is also delicious (but will obviously taste like a peanut butter chocolate chip cookie). Sunflower seed butter also has a stronger taste like peanut butter, which I personally love! And the most recent nut butter (or, really seed butter) I used was tahini for a tahini chocolate chip version which was SO  yummy!!

Maple Syrup

I am happy to report that you can use any of the following to sweeten these cookie dough bites: pure maple syrup, honey, agave, or date syrup! Pure maple syrup and honey are the two sweeteners I used the most often, although I recently used date syrup with the tahini version which was a good combination (the date syrup will definitely make the cookie dough bites a darker color, however).

Vanilla extract

I always buy pure vanilla extract for the best taste! The vanilla extract helps give a cookie dough taste. Although, as evidenced by these chocolate chip cookie dough bites, I also love using a tiny bit of butter extract in chocolate chip cookie dough bites!

Sea salt

Don’t skip this ingredient! A pinch of salt goes a long way here in bringing all the ingredients together.

Milk

So, here’s the thing. While I’ve made this recipe numerous times, I have to say the amount of milk (if any) you will need may vary based on the consistency of your oat flour, nut butter, what sweetener you use, etc. I’d first mix up all of the ingredients except the milk and chocolate chips. If the mixture seems dry, then add milk (Or water, but milk is best flavor) 1 teaspoon at a time until the cookie dough bites together and you can roll it into balls. Any type of milk works here; I typically use almond or oat milk but cows milk works too (just refrigerate the cookie dough bites after making them).

Chocolate chips

Obviously, a necessary ingredient in CHOCOLATE CHIP cookie dough! I definitely prefer using mini chocolate chips in these cookie dough bites, as they will not only more easily roll into balls but also have a better distribution of chocolate!

Serving Suggestions

As I’ve mentioned, these chocolate chip cookie dough bites are so versatile. I have eaten them for breakfast-I mean, they are made of oats ?(usually over vanilla Greek yogurt), by themselves as a snack (especially with a glass of cold milk or hot coffee), or crumbled over vanilla ice cream for dessert! They will last for up to a week in the fridge, but I highly doubt they will last that long especially as it’s just one serving! They also freeze well, too.

Serves: 6-7 bites; 1 large serving
Ingredients
  • ½ cup oats, ground into oat flour (about ⅓ cup + 1-2 tablespoons oat flour)
  • 2 tablespoons nut butter of choice
  • 1 tablespoon maple syrup*
  • ½ teaspoon vanilla extract
  • 1 tablespoon milk or water**
  • 1 tablespoon mini chocolate chips
  • Sea salt
Instructions
  1. Stir oat flour, nut butter, liquid sweetener, vanilla extract, and pinch of salt together.
  2. Add in milk or water, 1 teaspoon at a time, until a cookie texture forms and mixture can roll/stick together into balls.
  3. Stir in chocolate chips.
  4. Roll into balls.
  5. Eat and enjoy!
  6. Store any leftovers in fridge for up to 1 week.
  7. Very freezer friendly too for up to a couple months.
Notes
*see post for tested options. You can sub honey, agave, date syrup, etc.
