This southwest quiche is seriously filled with so much delicious flavor! This quiche is perfectly seasoned with a homemade taco seasoning that makes this SO good. In addition to the super simple homemade taco seasoning, this quiche is filled with sautéed peppers and onions, sausage, and cheese!! I can’t wait for you to try this recipe yourself…it requires very little hands-on cooking time, and the best part is it makes 6 servings so it’s perfect for feeding an entire family OR (in our case) to meal-prep on the weekend and then have leftovers during the week!
It really hasn’t been that long since we’ve had an egg recipe around here. Have you tried this broccoli cheddar ham sweet potato crust quiche yet?! The sweet potato hash brown crust is so fun and delicious!! Honestly, since I’m always making new recipes (either recipe testing for the blog or trying recipes from other blogs), I sometimes forget how many delicious recipes get lost in the archives!
In case you like eggs just as much as me, I thought I’d do a mini round-up of some egg breakfast recipes! While I do love eggs, I honestly don’t usually take the time to make them for breakfasts during the week. That’s why I love so many of these egg recipes below! Since I’m just cooking for my husband and I, they all make enough for leftovers to have on hand for super quick and easy breakfasts during the work week!

Back to this southwest quiche. Like many recipes, it was inspired by the ingredients/produce I had on hand at home (in this case, bell peppers and onions). I LOVE sautéed peppers and onions! I think I need to make this Mexican layered enchilada bake again soon and make a batch of sautéed peppers and onions to top it with. ? To be honest, I didn’t even initially have the idea to add in taco seasonings, but I had been looking at that Mexican layered enchilada bake recipe for some ideas to meal plan/prep for dinner, and then got the idea to add in the same seasonings in this quiche!
Ingredients for Southwest Quiche
The homemade taco seasoning
First, let’s talk about this yummy taco seasoning! Hopefully you already have all these spices on hand at home; it might look like a long ingredient list but it literally takes a minute to whip up. You’ll need 1 teaspoon of each of the following:
Cumin
Chili powder
Onion powder
Garlic powder
Paprika
Plus I added in ½ teaspoon pepper! I didn’t add any salt, as I found this recipe to have plenty of salt from the sausage and cheese, and honestly with all of these other stronger taco/southwest seasonings I found it really didn’t need any!
Other Ingredients
Along with the taco seasoning, you will need the following to make this yummy southwest quiche!
Eggs
Milk
Sausage
Cheese
Sautéed onions and bell peppers
That’s it!! I made this a crust-less quiche, so it saves time from making a pie crust from scratch. However, feel free to make a crust or use a store-bought crust if you’d rather have a crust in this quiche!
If you’re looking for serving suggestions to serve alongside this quiche, this recipe round-up contains many ideas! Lots of muffins, baked oatmeal, fresh fruit, etc would all be great ideas! I also recently made these sweet potato biscuits which would also be delicious! ?
- 1 large (or two medium) onions, diced (about 2 cups)
- 2 cups diced bell peppers (any color, I used a mix of red, yellow, and orange)
- 1 tablespoon olive oil
- 6 eggs
- ½ cup milk
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- ½ teaspoon pepper
- 8 ounces (1/2 lb) cooked sausage of choice (I used pre-cooked chicken sausage links)
- 1 cup shredded cheese (I used coby-jack, sharp cheddar is also a great option)
- Preheat oven to 375 degrees F. Spray a deep-dish pie pan or 9x9 pan with nonstick spray and set aside.
- Heat olive oil in a skillet over medium heat and add in bell peppers and onion. Saute until softened. Stir in the seasonings into the cooked veggies.
- In a bowl, whisk together the eggs and milk.
- Layer sauteed seasoned veggies, cooked sausage, and cheese in pie pan. Pour egg mixture over everything.
- Bake at 375 degrees for 35 minutes, then cover with foil and bake another 10-15 minutes or until eggs are set.
